In the green corner………..

coming straight from the farm we have our side dish: Iowa Sweet Corn

In the red corner………………

with ingredients from afar, we have our main course: California Club Pizza

Okay, enough with the boxing metaphor.

My all time favorite homemade pizza and Iowa Sweet corn…..

This meal was destined for GREATNESS!

California Club Pizza

Ingredients

2 Boneless, Skinless Chicken Breast

Chicken grill seasoning or rub (optional)

THIN Refrigerated Pizza Crust

Olive oil

2 1/2 cups Shredded Mont. Colby Jack Cheese

3 or 4 Roma Tomatoes, seeded and chopped

1/3 cup red onion, chopped

1/2 lemon, freshly squeezed

6 Slices bacons, cooked and chopped

Directions

Cook the chicken on a skillet with a tiny bit of olive oil. I sprinkled on some Chicken Grill Seasoning.

Once the chicken is fully cooked, cute it up into cubes (of course I use the Pampered Chef Salad Chopper)

Spray the Pampered Chef Bar Pan with cooking spray and unroll the thin pizza crust over it, spreading out the edges.

I put a tiny bit of olive oil on top of the pizza dough crust. Then I sprinkle the chicken all over and top with the shredded cheese.

Bake in 425º F oven for 15 to 18 minutes or until cheese is melted.

While the pizza is baking chop the tomatos and onion and place in a small bowl. Then squeeze the juice from half a lemon with the Pampered Chef Citrus Press into that bowl and stir. Then place in the fridge to cool.

Cook 6 pieces of bacon on a skillet or pan, place the cooked bacon on a plate and dry the grease off with a paper towel. Cut the bacon up into small pieces.

Once the pizza is done

Sprinkle the onion/tomato mix and bacon pieces all over the top.

Doesn’t that just look DELISH!??

Creamy cheese, cold texture of the veggies, and the crispness of the bacon…….is your mouth watering yet?

Now for the side.

Microwaved Iowa Sweet Corn

wha ….wha….what??

Did she say microwaved?

Umm yup I did! There are only two ways my family and I eat sweet corn:

Microwaved or Grilled.

And since it was a rainy day, microwave it was!

I don’t know if anyone else does this, but my dad has always just microwaved it. Does anyone else’s family do this??

It is sooo much faster than boiling water and waiting for that.

Just pop one sweet corn in the microwave for 2.5 minutes and DONE!!!

KEEP THE HUSKS ON! If you leave the husks on and don’t take them off till you are ready to eat, the corn will stay warm for 10 to 15 minutes.
