Stop with the paninis already

My love affair with my panini press has been well documented, (read about that here). It made its glorious return earlier this fall (read about that here).

Our family just loves being able to try different kinds of fresh, bakery bread and at the same time get rid of some of the lunch meat and cheeses that always seem to be sitting in our fridge.

My most recent creations

BLTA Panini (take out the L and add a bit of C)

Huh? A what?

Its a Bacon, Lettuce, Tomato, Avocado panini (take out the Lettuce and add a bit of pepper jack Cheese). Spread some butter or olive oil on each side outside piece of the bread, sprinkle with some Italian seasoning.

Grill & EAT! (We had these outside a few weeks ago when it was still nice out)

My kids loved them! And so did my “avocado haters” (my hubby and my dad). Notice my daughters shoes on the wrong feet…..

I also created a “Dutch” Panini.

My family is orginally from a small dutch community: Pella. And we love our Pella Bologna. (You can find this in any Iowa grocery store by the deli meat, make sure you peel off the skin before you start cutting it into slices).

Put a little bit of Wisconsin Cheese on there and you have yourself a wonderful panini. Again, spread some butter or olive oil in the outside pieces of the bread, sprinkle with some Orignal Seasoning Blend.

Grill (I grilled extra for my dad and my husband to take to work the next day. They aren’t as crispy if you do the microwave so I prefer oven or toaster oven to reheat, but they still taste great as leftovers)
