Pork Tenderloin with Pineapple Salsa
Quick Grilling Post.
We head out tomorrow morning for a long weekend in Pella, IA where I was born and where both my parents grew up. Cute little Dutch community….. I love going back to visit, eat, and shop! Hopefully some Dutch Pastry Posts to follow (my mouth is watering just typing that

So here is a recipe from one of my fave cookbooks Cook This, Not That.
Pork Tenderloin with Grilled Pineapple Salsa
Ingredients
1 lb pork tenderloin
2 Tablespoons Dijon Mustard
1 Tablespoon honey
1 Tablespoon chili powder
Sea salt & black pepper to taste
4 slices pineapple, core removed
1 red onion
1 jalapeno pepper, minced (DID NOT USE THIS, not a huge fan of jalapenos…sorry, just being honest)
1/2 cup fresh cilantro, chopped (LOVE me some of this, so I used a bit extra)
Juice from 1 lime
Directions
Preheat the grill.
Combine the mustard, honey, chili powder and a good sprinkle of salt and pepper.
Rub all over the pork.
Place pork on the grill for 35 to 45 minutes, the internal temp should read no more than 160ºF.
Again, the hubby is the grill pro and just goes by “feel” (WHAT?) So I really wish I could elaborate more on these grilling posts but I can’t. I ask him to please explain how you “feel” that it is done but “no can do” he says. Hmmm, must be a guy thing.
Anywho… time to start the side of….
Grilled Sweet Corn
Slap some melted (unsalted) butter onto the corn. Then sprinkle it with some of the following seasonings: parsley, chili powder, garlic salt, and cumin.
Place the pineapple chunks on the Pampered Chef Grill Tray with the corn.
Put that on the grill ASAP because it takes 25 to 30 minutes.
Now start the salsa (for the tenderloin)…
Chop up the onion, jalapeno (YUCK…don’t do it! don’t put this in your salsa, I know it calls for it but it might just ruin it…I don’t know for sure because I didn’t try it….. but I can imagine it would! seriously tho, do whatever you want…but I warned you) and cilantro and stir in the juice from 1 lime.
Once everything is done pour the salsa, with pineapple chunks, on top of the tenderloin.
Yum! Look at that….and only 210 calories!
If you go to T.G.I. Friday’s and get yourself some pork it will cost you…..1,190 calories to be exact….NO THANKS.
Served with some grilled sweet corn and fresh watermelon.
