Mine are better than yours
Sorry, Trader Joe’s but your Chili Lime Chicken Burgers are inferior to mine!

Okay, that was kind of harsh. I DO love me some Trader Joe’s and their Chicken Burgers are super easy to make.

We have had these a number of times but then I read someone else’s blog and she put Pepper Jack Cheese and some Guacamole on top. YUM
[I despised avocados before, but then I was pregnant with Cohen I tried some Quacamole Supremo at my fave Mexican restaurant and I really liked it. Thought maybe it was just the pregnancy hormones.... but I tried it again a few months after having the wee one and now I am a huge fan! My sister-in-law gave me a great recipe.]Anyways…where was I? Oh yes, I saw that Iowa Girl Eats put some avocado spread and Pepper Jack Cheese on her TJ’s Chicken Burgers. Why didn’t I think of that?

Soooo good. Great with some chips and salsa too…
I saw the ingredients on the back of the box and realized I can totally make these myself. Ground chicken, red pepper, lime, cilantro, etc, etc.
When we lived in the Des Moines area I would get ground chicken at our local Fareway Grocery Store (Fareway’s meat selection outdoes all of it’s competitors). But now that we moved back to our smaller hometown they don’t have ground chicken anywhere…. even pre-packaged in the back of their freezer.
I was super mad one day because I searched high and low for ground chicken. I posted my frustrations on my Facebook page and had a friend comment that I could go to the meat counter and just ask them to make me some. Fareway always has super helpful “meat guys.” They whipped me up some ground chicken in 15 minutes! WAHOO
So here is my version of Trader Joe’s
Chili Lime Chicken Burgers
Ingredients
2 lbs Ground Chicken
1/3 cup Red Bell Pepper, chopped
1/3 cup Onion, chopped
4 Garlic cloves, pressed
Red Pepper Flakes
Salt
Fresh Cilantro, snipped.
1 Lime
7 slices Pepper Jack Cheese
Guacamole & Salsa Recipe
Tortilla Chips
Directions
Place ground chicken in a large bowl.

Chop onions and red pepper with Pampered Chef Food Chopper.

Put onion, red pepper, and snipped cilantro into a bowl. Press in garlic. Sprinkle salt and red pepper flakes on top. Not sure how much salt or red pepper flakes I used. I just kind of did what I felt looked like a good amount.

Squeeze the juice of one lime into the bowl. Mix ingredients together with hands and form into patties.

Place burgers on the grill for 5 to 8 minutes on each side or until the internal temperature reads 165ºF.

After they are cooked through, place Pepper Jack Cheese on top of each burger and grill for about 1 to 2 more minutes.

Look at this spread….what a GREAT spring-time family dinner!

My dad was raving about these. In between bites he kept saying “Oh these are so good!” “I have never had a chicken burger before” “Where did you get the recipe” “Oh these are so good!” (Thanks dad)

JUST TRY IT
I made everyone try it with the guacamole on top….for at least one bite.
“Just one bite guys, it seriously taste so much better with it!” I said.
They all tried one bite and said “Yea, it is ok. I just don’t like guacamole.” So most of them just stuck with the burger, cheese and some Heinz 57 or BBQ Sauce on top. They all agreed it still tasted great, even without my beloved spread ![]()
But it’s okay, because my mom, uncle and I got to eat all the guacamole our hearts desired ![]()
