Meatless Monday

So my girl, Oprah, had a show recently about how her and the Harpo Studio staff started doing “Meatless Mondays”

Basically they don’t eat meat in any of their meals on Mondays.

Sounds simple enough? Right?

Well our family will soon find out.

I am forcing asking my family to join with me and try “Meatless Mondays” every week. But just one meal: dinner. I am the one that cooks….. so they really don’t have a say hah!

Also, some weeks it may not fall on a Monday, depending on what we have going on. But I would like to do at least 1 or 2 dinners per week that are meatless.

Meatless Monday Meal 1: From my Cook This, Not That Cookbook. I got to make home-made alfredo sauce for the first time. Ran into a slight hiccup (more on that down below), but it turned out to be a great dinner!!

390 Calories vs. 1,220 Calories Olive Garden Fettucini Alfredo (Yikes, what do they put in theirs?)

Red Pepper Alfredo

Ingredients

10 oz wheat fettuccine noodles

1 1/2 Tablespoon butter

1 1/2 Tablespoon flour

1 cup milk

1/2 cup half and half

3/4 cup chopped bottled roasted red peppers

2 cloves garlic, pressed

1/2 cup grated parmesan

Fresh cracked sea salt and black pepper, to taste

Directions

Bring a large pot of salted water to a boil. Add the pasta and cook until al dente.

Meanwhile, melt the butter in a medium saucepan over medium heat. Stir in flour and cook for a minute, until the two are fully incorporated.

Slowly add the milk and half and half, whisking to help prefent lumps from forming.

Add the red pepper and garlic. Turn the heat to low and simmer for 10 minutes.

Pour the mixture into a blender and puree until smooth and uniform in color.

[This is where I had a problem. My mom doesn't have a stinking blender! WHAT THE? Who doesn't have a blender?? AHHH I can't wait to get moved into OUR HOUSE! I had no idea she didn't have one until I was halfway through making the sauce. Basically the blender just purees the red peppers so we just had larger pieces of red pepper in our sauce, but no one seemed to mind...still tasted GREAT]

Return to the pan and stir in the Parmesan. Season with salt and pepper.

Drain the pasta and put back in the pan. Pour alfredo sauce on top and coat evenly.

Now for the side.

Roasted Parmesan Broccoli

Cut and cleaned 1 head of broccoli and placed in a 9×13 baking dish.

Drizzled with olive oil, parmesan cheese, and garlic salt.

Placed in the oven at 425º F for 5 to 10 minutes or until you hear the oil sizzle.
